  • 200 ml milk
  • 200 ml Cream
  • 1 dragon fruit
  • 1 pod Eurovanille Bourbon vanilla
  • 3 egg yolks
  • 120 g Sugar
  • 1 jar Passion Fruit Fresh Pearls

  • 1 pod Eurovanille Bourbon vanilla
  • 3 egg yolks
  • 120 g Sugar

DRAGON FRUIT ICE CREAM WITH BOURBON VANILLA AND PASSION FRUIT PEARLS
Instructions
  1. Heat milk with cream, together with the vanilla pod seeds, without letting it boil. Add the peeled and shredded dragon fruit.
  2. In another pan, place the 3 egg yolks with sugar and beat together. Once the milk has cooled, add the beaten eggs while heating up to 85ºC.

  3. Remove from heat, leave to cool, and keep in the fridge into an ice cream machine or a tupperware. Freeze and wait until it has the texture of ice cream.
