  • 6 purple potatoes, peeled
  • 2 garlic cloves
  • 500 ml olive oil

Ingredients for the mousse
  • 300 g Potatoes
  • 1 jar Chovas Crab spread
  • 150 g Cream
  • Salt
  • pepper

  • 300 g Potatoes

PURPLE POTATOES CONFIT WITH CHOVAS CRAB CREAM MOUSSE
Instructions
  1. In a saucepan over a very low heat, cook very slowly peeled potatoes with oil, salt, pepper and garlic.
  2. To make the mousse, boil the peeled potatoes with salt for 20 minutes. When the water has been fully absorbed, add the cream and mix with the crab cream until there are no lumps. Place in the syphon in two batches. Serve placing the potatoes on the bottom and the mousse on top.
