SCRAMBLED EGGS WITH AVRUGA

Ingredients
  • 3/4kg Potatoes
  • 1 Onion
  • 8 Quail eggs
  • 1jar Avruga 120 g
  • Extra virgin olive oil
  • 1tsp fresh parsley, finely chopped
  • Salt and pepper
Instructions
  1. Cut potatoes into rounds and chop onion finely. Fry these ingredients in a frying pan with plenty of olive oil. Serve on a dish.
  2. Fry the eggs and arrange them on top of the potatoes. Carefully break the eggs and season lightly.
  3. Sprinkle chopped parsley on top and add Avruga to taste.
